Chewy Peanut Butter & Coconut Squares

Peanut Butter Coconut Squares Recipe

Finding a tasty, low-carb snack that isn't loaded with artificial rubbish can be hard!
Veggie sticks and dip or a small handful of raw nuts are a great snack option but they don't always do the trick!

My Chewy PB & C Squares will definitely get you through that mid afternoon slump! They are suitable to eat if you are following one of my low-carb or ketogenic diets and they have become my new go-to snack when I'm craving a treat!

You will need:

1/2 cup of dessicated coconut
1/4 cup of almond meal
2 large tbsp of peanut butter (I like the crunchy one from The Natural Food Barn)
1 tbsp of rice malt syrup OR honey
1 tsp of raw cacao (optional)
a pinch of salt
1 tbsp of water

1.  Add all of the ingredients into a mixing bowl. Use a spoon to blend the mixture. At first the mixture may be dry and difficult to blend together but it will soften up. You may need to add an extra tablespoon of water. 

2. Once the mixture is well combined, place it onto some baking paper and press it into a 1cm thick rectangular shape. I use a small baking dish as a guide.

3. Cut into 8 pieces and store in the fridge.

Each square contains approximately 4g of carbs. One square would be a reasonable portion size. This mixture can also be rolled into bit sized balls but I find that process is slightly more time consuming so I prefer to make them into squares.
