Low Carb Chocolate Brownies Recipe

These chocolate brownies are fudgy and delicious and best of all they are actually good for you!! AND they are low-carb!! The secret ingredient may surprise you at first but I promise, you are absolutely going to love these!

Unfortunately I can not take full credit for these amazing brownies. I found the original recipe on a blog called 'Half Baked' (link below) I modified the recipe sightly to reduce the carb content so that they could be enjoyed as a super healthy treat while following my flexible ketogenic program.

The secret ingredient that makes these brownies so fudgy and moist is avocado! and even if you are not a fan of avocado, I promise, you will love them!!

This recipe makes 15 brownies and they only contain 6.5g of carbs per serve.

You will need:
50g of dark chocolate (I used the coles brand)
2 avocados
1/4 cup of sugar 
2 teaspoons of instant coffee (optional)
2 eggs
40g (1/2 cups) of raw cacao or cocoa powder (once again, I used the coles brand cocoa powder)
40g (1/2 cup) almond meal
a pinch of salt

1. Pre-heat the oven to 180. Grease and line a small brownie tray with baking paper.
2. Melt the chocolate in the microwave or on the stove top using the double bowl method. While this is happening, blend the avocados into a smooth paste using a food processor or stick mixer.
3. Add the melted chocolate to the avocado and beat well.
4. Add the eggs and do the same, once mixed well add the dry ingredients and beat until the mixture is smooth and even.
5. Pour the mixture into the brownie tray and bake for 25-35 minutes (pierce with a knife, when it comes out clean they are done!)
6. Chill in the fridge and serve cold.

These brownies will keep for up to a week in the fridge (but i promise they won't last that long!!)
