Low-Carb Keto Choo Chee Chicken

This recipe has become one of my favourite low carb dinners.

You will need:


2 Chicken Breasts
400ml Coconut Milk
1 heaped tbsp Red Thai Curry Paste
1
 tbsp Fish Sauce
1 tsp brown sugar
1 tbsp Kaffir Lime Leaves or Lime Zest
3 tbsp Olive Oil
+
Snow Peas, Bok Choy, Broccoli, Green Beans, Bean Sprouts

Brown sugar is optional but does help to balance the flavours, the carb count is minimal.
Kaffir lime leaves can be bought in a jar at the supermarket (usually in the same isle as the curry paste)

Method

Slice the chicken into thin pieces. Fry in 2 tbsp of olive oil until brown. Set aside.
In a small sauce pan heat 1 tbsp of olive oil and add the curry paste. Heat until aromatic then pour in the coconut cream.
Stir in the fish sauce, brown sugar and kaffir lime leaves (or lime zest), bring to a simmer then set aside
Cook the mixed green veg to your liking and serve with the chicken and 2-3 tbsp of choo chee sauce.
Serves 4
