This is one of my absolute favourite Ultra Lite recipes! It is full of flavour and so quick and easy to make.
120g pork mince 1 tsp coriander 1/2 stalk of lemon grass chopped fine 1 clove garlic minced 1 tsp dried ginger 7.5ml lime juice 50g bean sprouts 1 red chilli pod 60g lettuce leaves - approximately 3 large leaves 1 tsp olive or sesame oil Method 1. Stir-fry the coriander, lemon grass, garlic, ginger and chilli in a tsp of oil until aromatic. Add the mince and fry until browned 2. Stir in lime juice and beansprouts. Toss to combine 3.
