Low-Carb Vanilla Berry Cheesecake

This summer berry cheesecake is the perfect Christmas dessert! A typical cheesecake contains 20-30g of carbohydrate per serve! This recipe contains only 10g per slice so you can enjoy this delicious dessert guilt free!
Serves 10

250g ricotta cheese
250g light cream cheese
250g Jalna vanilla yoghurt
3 tbsp cornflour
2 eggs
1 tsp vanilla extract
200g frozen (or fresh) raspberries

1. Preheat the oven to 160 degrees
2. In a bowl, mix the ricotta cheese, cream cheese, yoghurt, cornflour, eggs and vanilla extract.
3. Beat by hand until the mixture reaches a smooth consistency
4. Pour the mixture into a lined cheesecake tin and bake for 40-50 minutes (until golden brown)
5. Serve chilled with berries on top

TIP: If your guests prefer a slightly sweeter dessert you can serve their slice with a tablespoon of honey or sweetened raspberry puree. ​
