These low carb waffles are simple, delicious and satisfying! This recipe makes 2 waffles and contains less than 6g of carbs per serve! (serves 2) These waffles make a perfect addition to your cooked breakfast and are also something that keep well in the fridge for those days when you just don't have time to prepare a meal. They also accompany salads and soups perfectly! You will need: 1 medium sized zucchini 1/2 cup of mozzarella cheese 1 tbsp of parmesan cheese 2 eggs 1/2 tsp of garlic powder/granules 2 - 3 tbsps of LSA (linseed, sunflower & almond mix) 1. Start by finely grating the zucchini, squeeze as much of the liquid out as you can and place in a mixing bowl. 2. Add the cheeses, egg, garlic granules and any other herbs you like. Mix well. 3. Add 2 tablespoons of LSA or almond meal, continue to mix well until the mixture forms a thick, moist (not wet/runny) consistency, add another tablespoon of LSA if you need to. 4. Preheat your waffle iron (or fry pan) and spray with olive oil. (Learn from my mistake, be generous with the spray!) 5. Cook for 5 - 6 minutes and serve with fresh salad or make these tasty waffles an addition to your bacon and eggs! You could also replace the zucchini with finely grated cauliflower and use a different cheese if you prefer.
