Pizza Fritatta

Serves 2 - 4


4 eggs

¼ cup of grated cheese
2 spring onions
2 tablespoons of kalamata olives
30g (a small handful) of pepperoni
½ capsicum diced
3-4 mushrooms


1. Heat a small, lightly oiled frying pan over low-medium heat

2. Whisk eggs and add half of the cheese along with the finely diced ‘whites’ of the spring onions

3. Pour mixture into the frying pan, sprinkle the mixture with the pepperoni, diced capsicum, sliced mushrooms and olives.

4. Turn down the heat and cover the pan with a lid so that the frittata cooks evenly without having to flip it over (the heat needs to be quite low otherwise the base will burn)

5. Leave to cook for 5-7 mins, add the rest of the cheese and allow time to melt. Garnish with the remainder of the spring onions.

Serve with a light salad or roasted vegetables!
