Low Carb Satay Salad

I've just purchased a vegetable 'spiralizer' and I'm loving it!! This Satay Salad is a great alternative to noodles and the dish is surprisingly satisfying! The dressing is delicious and suitable for those of you following my ketogenic program

You will need:


1 large cucumber
1 large carrot
1 tbsp good quality peanut butter
1 tbsp tamari (or soy sauce)
1 tbsp rice wine vinegar
1 tbsp freshly squeezed lime

Grate or 'spiralize' the cucumber and carrot. Dress with the satay salad dressing and serve with chicken, beef or tofu.

To make the dressing, whisk all ingredients together in a small bowl until they form a smooth consistency. Pour over your salad and protein.
