Very Nice Noodle Bowl

Noodle bowls are one of my favourite things to eat!! They are so versatile and easy to make! The flavour combinations are endless which means you can eat them again and again without getting bored!!

When I first started following the low-carb lifestyle, I sadly said goodbye to noodle bowls, the super sweet dressings coupled with the large serving of noodles didn't quite fit my new way of eating. So I decided to fix that and create a healthy, low carb noodle bowl that I can enjoy any-time, guilt free!!

You will need:
  • Vegetables of your choice - I chose cucumber, iceberg lettuce & carrot
  • Something crunchy - I used cashews, but peanuts or walnuts would also work well
  • Protein of your choice - This time I used chicken but prawns and beef work well. Tofu is perfect for a vegan option!
  • Noodles!! - For a low-carb option I chose to use "Zero" Noodles, also known as "Slim Pasta" - These noodles are made from konjac root, a root vegetable that has a firm, noodle like consistency but without the carbs! Vermicelli or soba noodles would also work well for a higher carb option.
Shred your veggies of choice and prepare the noodles according to their instructions. The low carb noodles do not need cooking, they just need to be rinsed well.

Add all ingredients to your bowl and top with your protein of choice. (I chose to marinade my chicken thigh in 1 tablespoon of soy sauce to add some extra flavour)

For the dressing I used:
  • 1 small, freshly squeezed lime
  • 1 tsp of sweet chilli sauce
  • 1 tsp of rice wine vinegar
Garnish with mint or coriander. Enjoy!
