Keto-Friendly and very Easy to Make!
My Lemony Heaven Bliss Balls are a delightful, zesty treat that will satisfy afternoon sweet cravings. They are vegan.
You will need: 1 large lemon 1 cup of shredded coconut 1/2 cup of almond meal 1 - 2 tsp of rice malt syrup (or honey) 1. Grate the zest off a large lemon and add to a bowl. Juice the lemon and leave aside. 2. Add the coconut and almond meal to the lemon zest and combine well. 3. Add the lemon juice and rice malt syrup to the dry mix and mash/mix well with a spoon. 4. Take a dessert spoon and scoop out a portion of the mixture, roll in to a small ball then coat in extra shredded coconut. 5. Store in the fridge for up to a week. - This recipe makes about 10 bliss balls. There are approximately 23g of net carbs per batch (which means each ball is only 2.3g of net carbs and a perfect keto-treat!) - You may reduce the rice malt syrup to 1 tsp and the batch will only contain 18g of net carbs (1.8g per ball) - You may also use cashew meal, but this is much higher in carbs, making the bliss balls a great post-workout snack! -You may need to add a touch of water or extra almond meal if the mixture is too wet or dry when you roll the mixture into balls.
